This is a really, really cool technique, I use it all the time. Ironically it was something I did not know about most of my career working with Photoshop. It involves using the middle gray or neutral gray in a photograph to correct colors.

Finding the middle gray is sometimes tricky. It is quite simply a gray that is not too black and not too white. What most people don't know is that the white part of the human eye is really gray. You can use this to color correct photos of people.

Step 1:
Open an image of a person.

Step 2:
Open the Curves palette by pressing Ctrl+M. Select the middle gray sample dropper tool. And sample the white part of the eye. If your lucky you got instant color correction if not sample around the grayest part of the eye until you achieve a desirable result.

Step 3:
Before and after should look something like this:
